Parmesan Crusted Chicken Schnitzels


2 Chicken Breast, skins removed
1 1/2 cups breadcrumbs
1/2 grated Parmesan cheese
1 egg beaten
Salt and Pepper to taste
Olive oil


1.) Rinse chicken breasts. Carefully slice through the chicken piece to make two thin pieces of chicken.
Place breadcrumbs, parmesan cheese and salt and pepper in a bowl.

2.) Dip the chicken pieces in the egg mixture and coat with the breadcrumb mix.

3.) Pat extra crumbs into each piece of chicken to ensure good coverage.

4.) Place prepared chicken on baking tray covered with grease-proof paper and bake at 180°C for approximately 30 minutes, turning once during cooking.

5.) Schnitzels should be golden brown when done.
